Indian Lemon Chicken & Couscous
1/2 teaspoon salt
1/2 teaspoon turmeric
1/2 teaspoon mustard seed
1/2 teaspoon cayenne pepper
1/8 teaspoon ground fennel seed
1/4 teaspoon garlic power
1/4 teaspoon ginger power
1/4 teaspoon lemons zest or
2 packages individual lemon juice
1 cube chicken bouillon or
1 tablespoon chicken bouillon powder
1 7oz pouch chicken breast chunks or
1 6oz can of chicken or
1 package freeze-dried chicken, rehydrated
1 cup plain couscous
1 3/4 cups water
Backpacking-Dinner
At Home:
Combine all dry spices and bouillon into a ziploc bag and tape closed.
On the trail:
Put 1 3/4 cup water into a pot with the bouillon and spices, and bring to boil, stir. Add the chicken and bring back to boil, stir. Add in the couscous, stir and remove from heat. Cover and let sit for 5 minutes.
